Simple Granola Recipe
Granola is one of my favourite breakfasts, and snacks. But I find that supermarket granolas often just make me feel a bit off. When I scrutinised the ingredient list I can see why, there is a lot in those mass produced granolas that really needn’t be there.
Making your own granola is so simple, and one of my favourites are these granola clusters which are incredibly simple to make and can be so easily adapted to whatever you have in your cupboards at the time. I don’t get hung up on the type of oats, nuts or fruit, I just work with what I have and may get something slightly different each time but it is always delicious.
Oven 180c
Mix together the following: 100g oats, 15-20g of plain puffed rice, 45g desiccated coconut, a couple of handfuls of nuts and seeds in a bowl.
Melt together 2 tablespoons of coconut oil and around 3-4 tablespoons of maple syrup depending on how sweet you like it and how quickly your dry mix absorbs the wet ingredients. You may need a little more, but to save on sugar I sometimes the juice from a small satsuma or even a bit of water to get that final mix.
Spread everything out on a baking tray but make sure it is compacted together and the mix is touching.
Bake for around 15 mins and then keep an eye on it as it can burn quickly. Let it cool down completely before you break it up in to clusters and put it in a jar to store. It won’t hang around for long.
